In a cocktail shaker filled with ice, shake Cynar, cordial, grapefruit juice and shrub. Strain into flute and top with soda water. Garnish with lemon wheel.
To make your lemon and lime cordial combine 2 cups fresh lemon juice, 2 cups fresh lime juice, 2 cups granulated sugar in a pot. Take the citrus shells from the juiced lemons and limes (3 total), put them in liquid and bring to a simmer (never boil) for 12-15 minutes, strain and cool. This step of adding the rinds will add a new and distinct level of tannin in your cordial. Good for up to two weeks.
